Singhare ki Sabji

“Singhara” or water chestnut is available during autumn season in India particularly in west Bihar, Bengal and Uttar Pradesh. In Bihar and Uttar Pradesh boiled water chestnut is eaten as evening snacks. It is also grounded to make flour which is then used to prepare “Puri” or “Halwa” and eaten during vrat (fast). “Singhre ki sabzi” is a recipe which is made on a regular basis in Bihar and Uttar Pradesh during its season as it cannot be stored for long (due to its water restoring property).​
