Saboodana ki Khichdi
Saboodana ki khichdi is made from soaked Sabudana (pearl tapioca). It is a popular evening snack with tea. It is taken when a person is on "fast" during Shivratri, Navratri, or a similar Hindu religious occasion.
Sabudana (pearl tapioca) is soaked for a while, and is then fried with cumin seeds, salt, red chili powder, green chillies and other optional ingredients such as fried peanuts. It is usually garnished with coriander leaves.
